I'm talking image/feel there, not pigment similarities!
Nicole is refined, elegant and, occasionally, if you lube her up just right, just a bit sassy: Ebony.
Salma is lush, funky and exotic. Get her on a stripper pole and she'll make you wanna stab yourself in the neck with a shrimp fork: Rosewood.
Maple...Hmm, maple...
Maple is brash and maybe even a bit tarty and it smudges up really easily and then looks even better. It's snappy and it likes simpler down home virtues. Basically, maple is the prom queen slut with a heart of gold.
Maple is Pam Anderson.

If there's one thing Pam Anderson isn't, it's soft. Brick hard/chip a toofer on those babies hard...definitely not soft.
If there's another thing Pam Anderson isn't, it's cheap. Think otherwise? See if you could afford her.

Ebony all the way. Not only does it look better, but it's smoother. Like dark chocolate maple
Despite what some of the others have said, there is a definite tonal difference created by the different woods.
My vwh is ebony and my vsbl is rosewood. That's the ONLY difference other than the paint job. They definitely have different tones. Also, my FP's are rosewood and my BFP is maple. Again, the only difference other than that is the paint jobs. There is a BIG difference in the tone between the BFP and FP's. Maple and Ebony are ~brighter~ sounding, where as the rosewood is more mellow and deeper sounding.
Rosewood is my least favorite of the 3

Problem there is you're assuming the necks and bodies sound identical and the only difference maker is the fretboard. Not so. No two hunks of even the same species of wood are identical and no two hunks of wood sound identical. So, what you're attributing to the
fretboard wood
could easily be the result of any of a number of other factors.
Also, ebony
can
look better, but it doesn't
always
look better. Depends on the color of the guitar and the other appointments. Sometimes, say with green, brown or other earthtone guitars, rosewood absolutely looks better than ebony.
