The best method for keeping a trem in tune is to make sure it's properly set up (to return to the zero point after a dive). See Rich's tech pages if you haven't already.
Backstops are hard to find but do turn up. ESP makes a version (I think Rich has them on his parts page).
Another option is the Tremol-no which should be available in April from Allparts. As far as I know, the only one that will help when you break a string is the Tremol-no (engaged).
