You're right.

I unsure of what to use, some say lemon oil while others say linseed oil as the acid in the lemon oil isn't good for the wood...

I'm unsure of what to get?

I've had offset dots going back to my 1996 USGR30. They never threw me off. In fact I feel like they're easier to spot since they're at the top edge of the fretboard. I've never played a JEM but it seems to me like the vine inlay would take some getting used to.
