I don't think the pickup configuration has much to do with where you should or shouldn't pick. If you move your picking hand forwards or backwards over the pickups, you should notice a change in the tone. Just grabbing my guitar, I noticed that I naturally place my pick between the
bridge humbucker and the single coil. I am not professionally trained, so my technique is lacking. YMMV

The real question is why did they STOP doing this? They don't make them with the color matched headstock any more. Don't know why, but I am sure it has something to do with efficiency in production.
(that's a nice way of saying they're being cheap)
