I've got a 2027xvv and i've often been tempted to do the same to that but the Vintage Violin is just too nice to do it too i think.
I've also considered getting a replacement body made for it in oiled Mahogany so i could keep the VV finished bod intact.
Beautiful guitar now though!
They were pretty rare as well weren't they (the 2127)?
Weren't they a domestic Japan only model ?

Thanks. The natural mahogany finish is really gorgeous. It's what Ibanez should have done in the first place instead of doing the TKF finish. The 2127x is indeed extremely rare and was only available for domestic Japan. Unlike the 2027, the 2127 was very short lived as they axed the model the year after it came out(I think). But as rare as it is, this is the 2nd one I've ever owned and it's great!!
I wouldn't really bother stripping down your 2027 as the VV finish is quite nice as well. I'm pretty sure it would be relatively easy to get a 7 string
mahogany body made.
