notice he's got 2 dark grey customs w/FF logo, one is "standard" (above) and one's got reverse headstock (below!) d*mn, seems like Dino's got more customs than Vai or uncle Joe...

I love the red one with DC inlay on fretboard and the black neck thru with fixed bridge. I have no idea why Ibanez never made his signature.

If you're an intensively touring/recording guitarist (like Dino) I'd say you'd want at least 5.

it's not about how many pickups you got. would you need more guitars just because they're HSH? then, probably Ibanez gave him full disposability about providing him custom guitars, so, why not?
