Not Sure what you mean by voltages? They're not usually specified on guitar pots!
As for the value of the pots, here goes....
Humbuckers generally use 500k ohm pots,
Single coils usually 250k ohm pots,
Active pickups about 25k ohm pots.
basically the higher the pot value the less the treble is attenuated. That's why singly coils have 250k ohm pots, they can stand to loose a bit of treble.
Of course there are exceptions to the rule so It's really a case of try it and see if possible.
Dimarzio I think recommend a 1meg ohm pot for the tone control.
Now for the taper, logarithmic or linear, this is how the resistance changes as you turn the pot. A pot that give half the maximum value at half turn is linear, a pot that gives say one tenth the max value at half turn is log.
I always thought you'd use a log pot for a volume control as the response of the ear is logarithmic, (that's why the decibel is a logarithmic unit), but from what I've read guitar pickups are such weird (naff) things that sometimes a linear pot will give you the best result.
I would have said linear for the tone pot, but again I think different people will have different views.
Ibanez use a 500k ohm linear pot for the volume and 500k ohm log pot for the tone in the Jem guitars.
