Your method is perfect, assuming the cutter passes all the way through the left and right sides, not just up to the edge. But I would add that I wouldn't use Ash, regardless of it's age. It's very porous, and Ash can swell after it's been cut, leaving indentations at the pores, and bulges in the solid sections. I'd use Maple if you've got it. The Maple swells and contracts in a more uniform way. You're likely to have longer lasting blocks with Maple.
