What I'd really like to see in lessons... are dedicated students who love to practice and have a commitment to becoming better players, while wanting to be instilled with a love for well written melodic harmonic guitar based songs ...

I think this turns off studens more than anything. Some instructors treat the student as though they're paying simply for the priveledge of hearing them riff and shred. This is insanity!
I think instructors need to keep it interesting and challenging without being overbearing. Everything else will flow much easier.

I like the way Paul Gilbert teaches. He shows you little bits of a lick at a time, and never actually plays it in its entirety (and normal speed) until the end of the session. A teacher that would tailor the lessons to my music tastes would be awesome as well.

Well as a fairly new student that's still in the process of learning I can tell you my perspective on what I think early lessons need based on what's given me trouble. (I've so far been mainly teaching myself with the aid of a couple DVD & book based programs).
Barring.
Hammer-ons and pull-offs.
Bending.
I'm having a lot of trouble with those concepts. I think part of the problem I'm having on the DIY route is you really need to be watched (to get feedback on what you're doing well or not so well) and shown. Not just 'told' how to do it.
I do intend to get a real instructor at somepoint soon and I hope that he/she will be able to cater to that.
