Dream Theater/John Petrucci - Just about all of them, but Awakes are probably my favourite.
Symphony X/Michael Romeo - Genius, to me i think the Devine wings of tragedy has a bunch of awesome solos, but so do all of their albums.
Racer X/Paul Gilbert - Superheroes has some great solos.

but an obscure one that I've always loved was Glenn Tipton's solo on "Beyond the Realms of Death" - on Stained Class

scorpions - virgin killer album. I think it's their best album from the
uli jon roth
period.
queensryche - operation mindcrime. that one blow me away when I first heard it.
ozzy - the ultimate sin. crazy riffs from jake.
Iron maiden
- killers album. still sounds fresh today as it was when it came out. To me it is still their best album.
