Off the top of my head:

Harvest by Opeth (Blackwater Park)

Dave Matthews Band.. Believe it or not Dave is a awesome rhythm guitarist. His music holds up solo just as good as it does full band..

Under estimated guitarist in my eyes. Doesnt get the credit due to him as a player. His influence is very percussive.

Tears In Heaven or anything Clapton. Diary of a Madman is fun to play too.

++++++1

I was about to say every DMB song til i read this, and i agree. Dave is definately an incredible player, his style of play is very original and quite difficult at times. Plus he plays his heart out, every song.

Jamming out some DMB on acoustic is just a great time IMO. Cant wait to see him again in june.
