I think I liked Satch's better for the most part - stuck to point a little more. Vai's was better towards the end IMO.

Under no circumstances would I look at that as an honorable way to play a national anthem...

Satch's version was completely boring, Vai's while entertaining went completely out of key in quite a few places.

Vai just did it in the way of Hendrix, where as Satch just did it with waaaaaay to much wah...and honestly, the national anthem is so freakin' boring anyways, its acceptable to spice it up like that without it being dishonorable.

Yeah, I think Vai just did it a little more Hendrixy, if you notice where he goes off, it's during the parts where the words are "And the rockets red glare, the bombs bursting in air", so he was trying to recreate the sounds of rounds flying through the air and blowing up just like Jimi did during his famous performance.
I felt that Satch's version was extreeemely rushed.
Also, I noticed that Vai was the only one who performed it using mostly chords instead of just single notes, and that is impressive.

Yeah, Satch's timing was way off...
I don't know if you can really call 2 note octaves "chords"...

He did that a lot, but he threw a lot of chords in there too. It might not be incredibly hard, but it sure sounded a hell of a lot thicker, eventide and all.
