I agree with many for Ladie's Nite in Buffalo - what a solo! Also Petrucci with Under a Glass Moon. A couple of my other favourites are Adrian Smith - the solo from Prodigal Son on the Killers album - not many notes but what a feel and great sound!

Also Alex Skolnick - Eerie Inhabitants from Testament's New Order and Marty Friedman on virtually every track on Rust in Peace.

Oh yeah - Perpetual Burn by Jason Becker has some of the most incredible solo's ever by any guitarist IMHO!

"Beyond the Realms of Death" - Glen Tipton - Judas Priest. Not especially flashy, but very emotional and well phrased.

2 more to add onto what I already posted:

Tony MacAlpine -- "Time" (beautiful, haunting, and tasteful)
John Petrucci -- "Surrounded"

YJM - anything

Steve Vai - anything

Paul Gilbert - "Screaming Blues O´mania" (the entire tune is pretty much a solo)

Joe Satriani - anything from "Surfing With The Alien" & "Flying in A Blue Dream"

EVH - Jump, Beat it.

Greatest intro/riff is "Sails of Charon" by Uli Jon Roth. Awesome!

No such thing, but one of my favorites is undoubtedly Rhandy Rhoades' solo spot on the Tribute album. Awesome tone, and the entire solo sounds timeless, not trendy.

Some ones you guys forgot.
SSV- Wings of the Strorm
JPetrucci - Home
and 1 of the all time best that is underrated by every1 but me is Satchs The bells of lal pt.2 Why does no one ever mention this song as it is signature Satch and her shreds as much as any1 in this song.

Also forgot to mention EVH's solo on Feelin, it just kills me every time i hear it because it fits in so perfectly then ends with a killer riff then quietens down to finish of the album. But then almost every VH record ends in this sort of way.

Right now I've rediscovered Fredrik Thordendals solo on the song Concatenation. I love that kinda psycho, atonal sound.

Difficult not to lump the two Dave Gilmour solos in Comfortably Numb together and pick that one as the best, but there are two others by Steve Howe I love:
"Turn of The Century", from Yes' Going For The One, and
"Yours Is No Disgrace", from Yes' Yessongs album
Jamie Glaser's solo in Chuck Mangione's "Feels So Good" is another awesome solo.
Joe Pass' "Acoustic Blues" from Virtuoso #4, while really a solo instrumental, is way out there on the edge and needs to be heard by every guitarist (imho)
George Harrison's double tracked "And Your Bird Can Sing" has always been a favorite, though it should be considered differently than say Vai's "Big Trouble", which demands you stop what you're doing and spend a few seconds in complete awe.
Any live version of Jimmy Page playing "Dazed and Confused" will also put a big stupid grin on your face.
