I'll have to drop by once in a while and check the place out... I live way on the other side of town.
As for the Grand Canyon, that's a bit of a drive, but they have helicopter day trips you can take (site seeing tours). We've got some places just out of town like Red Rock or the Valley of Fire... IMO Red Rock is more fun, lots more to see. I have a year pass to go out there, and like to go running there on the weekends.
Food.. something near and dear to my heart.... Buffets around here kick ass. The best in my opinion are the Spice Market buffet at the Aladdin and the buffet at the Bellagio. There's one at the Mirage that's pretty good too. All are high quality, but expect to pay a lot ($20-$35 per person depending on which you go to). The Rio's seafood buffet is pretty good, but their carnival buffet is lacking, although a lot cheaper than the others I mentioned.
If you want to check out guitars and stuff... go to Cowtown guitars on Maryland Parkway. I'm pretty sure they're still selling some
Paul Gilbert owned guitars... and believe me, they're not way overpriced (You could expect to pay over $6k for a used Vai guitar on evilbay, and get something owned by Paul at Cowtown for around $600). Just a thought : )
I'm sure you've seen the strip plenty during your last visit(s), and that can get old pretty fast. There are some good shows to see though... I've seen Mystere 3 times, "O" once (not as good IMO), We Will Rock You (Queen tribute, and I liked it a LOT since I'm a Queen fan), Legends (impersonators), and a couple others here and there.
