Recording tips for demo/ep


my band is going into the studio this weekend to record a 3 track demo/ep.
here is the thing thats going through my head.. we're a 1 guitar band, so when we play live there is no rythm guitar under solos etc. do you think it'd be a good idea to record rythm tracks on a demo/ep when we will sound different live, or best to wait until we have a solid album to experiment with stuff like that.
i'll be double tracking most of my guitar anyway, just to get a beefier sound, just "umming and arring" over the rythm guitar for solos.
