So I bought an old Ibanez S540 a couple of years ago and replaced the bridge pickup with an X2N. This was working fine, except I left the back cover off the guitar because I planned to replace the neck pickup as well. Then I was moving home, and somehow I managed to disconnect some of the soldered wires. So basically I've ripped out the neck & middle pickups and desoldered the X2N I fitted previously, so now I have a DiMarzio Humbucker from Hell in the neck, and kept the X2N in the bridge.
My Les Paul has an X2N-7 & Air Norton-7 in it, but the wiring seemed to be so much simpler with its 4 knobs and one toggle switch! It took me less than 10 minutes to remove and replace the pickups.
So back to my Ibanez, basically I want to wire the two pickups I have screwed in but without a middle pickup. I haven't decided on a particular middle pickup yet, so I'm happy with bridge and neck.
Here's a stock wire diagram for my guitar (with some MS Paint alterations!)
Would the pickups work like that? (I've shaded the middle pickup wires a very light grey to make them almost invisible)
This way when I do get my middle pickup (possibly a
Tone Zone S), I can wire it up quite easily.

Even though my guitar was apparently stock when I bought it, the wiring is slightly different from the diagram above: on the 5 way switch, bottom left pin on the OTAX side is soldered to the bottom right pin of the VLX91 side, and the bottom right pin on the OTAX side is soldered to the copper plate with OTAX engraved (and there's another blob of solder there with nothing attached):
