Well, the first thing is to understand that if all you have is a typical 5-way switch and two humbuckers, you can't just get any coil combination that you want, you're limited to what the 5-way's wiring is able to offer. In fact, a "normal" Fender-style 5-way switch won't even be useful for a 2 pickup guitar. For HH guitars, Ibanez generally uses a different switch to give 5 distinct tones. But still, the particular switch they use offers:
1 - Neck coils in series
2 - Neck coils in parallel
3 - Both pickups (coils in series) together in parallel
4 - Inner coils in parallel
5 - Bridge coils in series
The only other thing you could do in theory is to flip it around such that you get the bridge coils in parallel, but otherwise, there's not much else you can do with that switch.
If you're looking for a particular type of wiring, you'll need either a 4-pole 5-way switch that opens up the wiring possibilities (though is a bit of a pain to wire) or a mini-switch or push-pull switch that allows you to coil-tap the humbuckers separate from the 5-way.
Being that a coil-tapped humbucker isn't hum-cancelling and also tends to be somewhat weaker than a true single coil pickup, I don't generally like that option. Meanwhile, the neck humbucker with coils wired in parallel is a nice option for clean tones that are still hum-cancelling. But that's just my personal experience, yours, as always, may vary.
