Homemade burger recipes

Hey all - I've gotta say, along with guitars, girls, and microbiology, burgers are one of my favourite things, and I love making a batch of homemade burgs and freezing 'em, so I can eat them anytime. I'll grill 'em all winter (standing in the snow in the backyard) - or because we recently lost our bbq, I'll grill 'em on a stupid little indoor grill. But I love a good burg. I'm just looking for some more homemade burger recipes to add to my repertoire.

Here's one of my favourites to get the ball rolling:

1 kg lean ground beef (~2 lbs)
3 eggs
1/2 cup bread crumbs
1/2 of an onion chopped
100 ml HP sauce
1 tbsp cayenne pepper
1 tbsp coarse ground pepper

This usually makes roughly 7 burgers

So . . . let's get started!

That seems to be about the basic burger recipe, although 'ground beef' always sounds (to me) like a dropped steak....

MINCE DAMNIT!

Try the same thing with minced ostrich for the low fat alternative (my favourite)
Chopped spring onions and chilis for a bit of oomph.
Pork or chicken mince works too.
Some minced garlic (about 1 tsp) for that continental touch. Not recommended for girlfriend coming over nights.
All those vegetarian things. I've got a lentil burger recipe somewhere if you want it.


Microbiology and burgers.... if the takeaway kind, these interests may not be entirely mutually exclusive.

If it has bread and eggs in the recipe, it becomes meat loaf and not a burger!

I usually just use whatever is lying around, but of course there are the favorites...

An egg or two
Garlic (minced cloves or powder in a pinch)
worcestershire sauce
Mrs Dash (tons of different flavors, they're all good for burgers except the pork and chicken one)
Lots of fresh ground pepper
Onions, but not too many, great flavor but they can change the texture if you use too many
Anything else lying around that sounds good in a burger.
Mix it all up in a bowl and let it sit covered in the fridge for a few hours.
Take it out and ALWAYS let it get up to room temperature before grilling.
Brush them with olive oil and salt them (it won't make them dry at this point) right before you grill them.
Never EVER flatten them out on the grill with the food turner.
Turn them only ONE time.
Also, a little trick is after you have made the patties, use your thumbs to make an indentation in the center top and bottom of each burger. Kind of a smooth shallow little bowl on both sides. Burgers tend to swell in the middle while cooking so by doing this you end up with a flat burger instead of a pregnant one that's all swelled up in the middle.

Nice tip, never thought of that one. These recipes just made me pull some burger from the freezer!

Yeah I tend to agree - but the eggs/bread crumbs make 'em easier to cook all the way through without burning the outsides.

Too true . . . although I find the biggest culprits of poorly prepared food (from a micro standpoint) are usually the smaller places, and not the chains . . .

Exactly!

Now, dice up some tomatoes, crumble some good imported (from Greece) feta cheese, a lil olive oil and oregano, jam it in the minced Ground beef, add fire, serve on a bun with garlic butter, toasted, of course with your choice of garnish and condiments and off you go.

And hey, has anyone tried adding ground pork to a burg? I've heard from friends that 1/3 pork makes 'em extraordinary . . .
