I have a few recipes that I have found and tried with GREAT results. I'm currently on a keto diet called the anabolic diet, where your body is turned from a carb burning body to a fat burning body. Essentially, it enables you to build muscle while simultaneously losing fat. It's working great!
One downside - it's very difficult to resist carb cravings for me. Some people can live on steak, eggs, olive oil, ground beef, etc forever. I am not one of those people. I love pizza and ice cream and pancakes. So, I will share 3 of my favorite recipes that I've had wonderful success with!
1 1/2 cup riced cauliflower
2 1/2 cup cheese
Low carb pizza sauce
Seasonings of choice - I use oregano, parsley, and basil with some garlic salt
-any toppings you want. I like just cheese but I've used bell peppers, bacon etc with great success
-Rice cauliflower with cheese grater and put in microwave for 7 minutes
-preheat oven to 450°
-after cauliflower is heated, drain exess water. Add to bowl with 1 1/2 cup cheese and 3 eggs, and mix evenly.
-pour your crust mix onto a pizza pan, spread evenly.
-put crust in oven for about 13-14 minutes
-when crust is done, apply pizza sauce and 1 cup of cheese (mozzarella and a little cheddar is my way)
-put back in oven until cheese melts, generally 2-3 min
Take out, slice, and enjoy! It tastes amazingly like real pizza and the nutrition is EXTREMELY low carb, high in fat and high in protein. Perfect for a keto diet. Ill post nutrition facts when I get home.
