SD basically dropped the ball. The pickups were ordered early january with a promised date of end of february, that got bumped to early march, then late march. Now they are promising completion by monday the 11th of april, we'll see, I hope so.

That's kind of like asking Ibanez not to put JEM on a JEM or Fender to leave out Stratocaster don't ya think
In other words, no, the Leviathans will all carry the Leviathan name

The 2 pack urethanes I use are the same paints they use on cars. It will take a hell of a lot of abuse, scratch resistance is great, chip resistance is great, and it's what all leviathans are finished in.

Would I be able to, physically yes, on these guitars, not at this time. I've tried to leave as many options there as I can feasably do, but if I allow to many options, it becomes far to difficult to keep up with any orders so not at this time, no.

Hard to say, really. A lot depends on how well the wood was seasoned, how the neck is built, what kind of finish it has, the kind of environment it's exposed to, etc.

Flatsawn necks can be plenty stable, and multi-laminate necks are also well regarded for their stability. Graphite rods can help stabilize necks as well. Quartersawn lumber is getting increasingly difficult to find, so a 1-piece quartersawn neck will be an expensive option.
