This isn't a stripped thread thing. It just backs the screw out enough to make the strap pin loose.
Wood glue should not stick to the threads of the screw and you should ultimately be able to back it out in the future. With metal I'd use Loc-tite but I didn't think that would work for wood. I used a very small amount of wood glue, just enough to barely coat the screw. Like you, I didn't want to make it permanently in there or mess anything up.
That said, Rich's method should work too. Basically you'd be creating a tighter fit and therefore more friction between the wood and the screw. I think the problem currently is that there's more friction between the screw and the strap pin than there is between the screw and the wood. As you move around while you're playing, you just begin to unscrew the thing.
