New Pickups, but which ones?

Good Morning, or Day or Night everyone.
Not too long ago, I bought a new guitar, and I really like it, so much so, that, in due time, I will probably review the guitar and post some pictures as well.
The only thing I am not too happy with are the pickups.
It came with an Ibanez INF3 at the neck (27 frets btw) and a "unknown model" at the bridge position.
Since the guitar itself was pretty cheap, I decided to go the extra mile and spring for a set of new pickups.
Now, I have narrowed it down to:
1. Either he Joe Satriani set (Mo'Joe + PAF Joe)
2. A Steve Vai wannabe-set (Evo Bridge /EVO2 Bridge + Evo Neck)
The only question I have is, if the Evos sound good in single-coil mode and if using them in a dual humbucker configuration is worth it.
I mainly play Rock, Blues-Rock, Hard-Rock and some Vaiish-Hendrixii-Satchi-Mess.
I would like the pick-ups to do harmonics and pinch-harmonics extremely well and to deliver a nice rhythm sound, ala Chickenfoot.
Suggestions are welcome.

I'd choose Evo 2 (and another Evolution in the neck or a PAF Pro). It's my favourite bridge pickup.

I would think outside of the box! be different! Seymour Duncan Makes In my mind far superior pickups! I'm sure someone at customer service could dial in the tone your looking for! Try Alt 8 sh-15 or tb-15 and a Sh-1 or Tb-59 depending on if you have a trem . or you try the new 59 hybrid that sounds awesome! it just depends on what you like but well worth consideration!!!!

The new Seymour Duncan 59/Custom Hybrid would probably suit you to a tee with what you are wanting to play. Its an awesome pickup that combines the best of both vintage and modern humbucker tone. Perfect for the styles you mentioned.

I've played some duncans recently and found them to be.... boring sounding. Dimarzios seem to have a bit more punch for me. Just CL pickups or find guitars with the same materials and similar builds and test them out.

Well, after considering every suggestion, I went ahead and got a set of Evos, simply because they were offered to me for next to nothing.
The 59/custom is simply to expensive atm, but I will keep it in mind for a later occasion.
