I'm gonna be doing a rack and pedalboard using George L cables. Does it really matter which plating i get on the end plugs, considering the gold plated are almost twice as much than the nickel or unplated? thanks.

gold plating has less resistance and therefore will give your signal a little extra push where you want it to go. they're worth it i think. I usually use monster cables tho because if they crap out on me i can always trade the busted one for a new one no questions asked
