Hello, im new to the forum. Recently bought at jem 70v sfg, a massive difference in both playability and sound from previous cheaper guitars ive had.. One thing that bothers me though is the middle pickup(single coil), the volume differs a lot from the other pickups ~ so much in fact that its a useless position to switch to in a live environment.. is that common? Am i supposed to have the dexterity to adjust my own volume nob while switching positions as i play? Or is there some kind of adjustment that can be made to the guitar to remedy the volume difference between the different pickups?

You can't make a single coil as loud as a high output humbucker, the middle pickup is there to work with the coil splits in positions 2 & 4, so yes, position 3 is pretty useless, it can sound ok for clean stuff where the volume drop isn't so bad.
